Chilli lamb with couscous


SERVES 2 - PREP 15 MINS - COOK 10 MINS
"EASY"

2 tsp chilli paste or harissa
2 lamb leg steaks
140g/5oz couscous
25g/1oz toasted flaked almonds
50g/2oz raisins

Whisk chilli paste with 3 tbsp olive oil, salt and pepper.
Drizzle 1 tbsp of the mix over lamb and rub over to coat both
sides evenly.

Heat the grill, then cook the lamb for 3-4 mins each side
until well browned.

Meanwhile, tip the couscous, almonds and raisins into a
heatproof bowl. Pour over 300ml/-1/2pt hot stock or water, cover
with a plate and leave for 5 mins. Fluff up, then fork in the
remaining chilli oil. Pile the couscous on 2 plates, top with the
lamb, and sprinkle with chopped coriander or parsley if you have it.
