GRAPEFRUIT AND MANGO SALSA
■ Serves 4
■ Segment a pink grapefruit with a sharp knife. Cut each segment into 3 and put into a bowl. Peel a ripe mango, cut the flesh away from the stone and cut into pieces about the same size as the grapefruit. Add to the grapefruit with 1 finely chopped red chilli, the juice of 1 lime and 2 finely chopped spring onions. Season, then stir in a handful of rouahly chopped coriander leaves.
