THAI-STYLE PRAWNS

■ Make a marinade by mixing 1 chopped red chilli with 1 tbsp olive oil, 2 tsp Thai fish sauce, 2 crushed garlic cloves, 2 tsp grated ginger and 1 tsp qround cumin. Toss with 600q jumbo king prawns with the shell on and leave for 5 minutes.
■ Thread the prawns on metal skewers, put in the centre of the hot barbecue grill and cook for 2-3 minutes. Turn once until opaque.
